I. PRODUCTION PROCESS
The process of freeze-drying strawberries includes four main steps:
Step 1 – Freezing: Fresh strawberries are washed, sliced and frozen at very low temperatures (-40°C) in a special chamber. This prevents the formation of ice crystals that can damage the cell walls of the fruit.
Step 2 – Vacuum: Frozen strawberries are placed in a vacuum chamber, where the air pressure drops below the triple point of water (the point where water can exist as a solid, liquid, or gas).
